I got the this recipe for Almond Cranberry Granola from a blog a good friend suggested, http://savorysweetlife.com/ you can find it on my sidebar. I often find wonderful recipes but not all are great for little ones. This was an awesome recipe which Sid measured and mixed herself. Sid doesn't like nuts much and we have a little friend with a nut allergy so we skipped the almonds and it is still very delicious! The best part is since Sid made it all she is so eager to eat it. She has had two bowls since it has cooled.Here it is:
Almond Cranberry Granola
3 cups rolled oats
½ cup wheat germ
½ cup flax seeds
1 tablespoon cinnamon
1 cup slivered almonds
1 cup dried cranberries
1/4 cup vegetable oil
1/3 cup brown sugar
¼ cup honey
2 tablespoons water
Directions
1. Preheat oven to 300 degrees F.
2. Combine oats, wheat germ, flax seeds, cinnamon, almonds, and cranberries in a large bowl.
3. In a separate bowl combine vegetable oil, brown sugar, honey, and water.
4. Add the honey mixture to the dry ingredients and stir until all the oats are evenly coated. Transfer wet granola evenly on to two large cookie sheets lined with parchment paper.
5. Cook for 1 hour, stirring every 15 minutes.
6. Remove from oven and allow granola to completely cool before serving. Don’t worry if the granola doesn't seem completely crunchy after coming out of the oven. It will crisp up once completely cooled.
